Eggs and Cholesterol


I often get asked whether eggs are okay to eat as people are worried about their cholesterol levels and my answer is yes!

Eggs are very nutritious and are a good source of protein as well. They contain nutrients such as Vitamins D, B12, B6 and A and minerals iron and magnesium. They also contain choline which is great for brain function and memory!

The cholesterol that they contain isn't the same as the cholesterol that is found in the body so it doesn't have the same effect.

Try this tasty recipe which is full of nutrients

Sweet Potato frittata

350g sweet potatoes, peeled and chopped into bite-size pieces 1 red onion, chopped 1 red pepper de-seeded and sliced 125g frozen peas 6 medium eggs 1 tablespoon chopped mint 1 tablespoon chopped chives

Cook the sweet potatoes in boiling water until tender - about 8 minutes

Heat some oil in a frying pan and add the onions, sweet potato and peppers. Cook for 5 minutes and add the peas, cook for a further couple of minutes.

In a large bowl, beat the eggs with a fork and add the cooked vegetables.

Mix well and stir in the herbs.

Use the same frying pan, add more oil if necessary and pour the mixture back into the pan. Cook on a low heat for 15 minutes and preheat the grill to medium.

When the frittata is golden, finish off cooking under the grill for a further 5 minutes until golden on top.

Can be served hot or cold.
